Ingredients
- ½ cup vegan butter (earth balance)
- ¼ cup coconut oil
- 2 tsp vanilla extract
- 6 Tbs Just Egg
- ½ tsp baking soda
- ½ tsp salt
- 3 cups almond flour
- .2 cup coconut sugar (optional, can do all monk fruit)
- ½ cup monk fruit sugar (lakanto)
- 150 grams vegan chocolate chips (Enjoy Life)
Directions
- Preheat oven to 350 F
- Cream together butter, oil, and sugar
- Add eggs, vanilla
- Mix dry ingredients in a separate bowl
- Mix together wet and dry ingredients
- Add chocolate chips
- Line baking sheets with parchment paper
- Scoop out 64 small cookies onto 3-4 baking sheets (or bake separately if you only have one)
- Bake for 10 minutes, allow to cool before removing
