Ingredients

  • ½ cup vegan butter (earth balance)
  • ¼ cup coconut oil
  • 2 tsp vanilla extract
  • 6 Tbs Just Egg
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 cups almond flour
  • .2 cup coconut sugar (optional, can do all monk fruit)
  • ½ cup monk fruit sugar (lakanto)
  • 150 grams vegan chocolate chips (Enjoy Life)

Directions

  1. Preheat oven to 350 F
  2. Cream together butter, oil, and sugar
  3. Add eggs, vanilla
  4. Mix dry ingredients in a separate bowl
  5. Mix together wet and dry ingredients
  6. Add chocolate chips
  7. Line baking sheets with parchment paper
  8. Scoop out 64 small cookies onto 3-4 baking sheets (or bake separately if you only have one)
  9. Bake for 10 minutes, allow to cool before removing
